The University of Wisconsin-Madison needed to replace the existing Meat Science and Muscle Biology Building. Mead & Hunt provided food processing services and complete commissioning services for architectural, mechanical, electrical and plumbing systems, as well as process equipment for this project. In addition, Mead & Hunt’s team led the USDA certification process. This certification process relies on the commissioning authority to review the processes in the facility and help the owner develop their Food Safety, Hazard Analysis and Critical Control Points (HACCP) and Hazard Analysis and Risk-Based Preventative Controls (HARPC) Plans for USDA certification of meat processing. Mead & Hunt’s commissioning authorities then worked with UW staff to validate the repeatability of the processes and procedures identified in the plans and confirm the rigorous performance requirements for animal, personnel, and product safety.
This world-class facility will train the next generation of meat industry leaders with cutting-edge technologies, support innovative research interests through interdisciplinary efforts, provide outreach education to foster production of wholesome meat products for the public, and support the economic development of the meat industry.
